The small shell pasta is first cooked until tender, drain the pasta, and make the sauce like a classic cheese sauce, but with the addition of shredded monterey jack cheese. Cook the sauce until both of the cheese has melted and the sauce has thickened. Mix with the pasta and serve.
Creamy Monterey Jack Shells and Cheese
Ingredients
- 16 oz. small pasta shells
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 2 1/2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup shredded monterey jack cheese
- 2 cups shredded cheddar cheese
Instructions
- Cook pasta according to package directions. Drain and place into a large bowl. Melt butter in a large saucepan over medium heat.
- Add in flour, and cook for a minute to brown. Pour in the milk, salt, pepper and both cheese. Continue to cook over medium-low heat, while whisking constantly until the sauce has thickened. Mix the sauce with the pasta.
