Cornbread is a delicious southern comfort side dish that is perfect for serving with anything. Instead of baking the cornbread into a pie dish, they are baked into individual muffin tins. Making sure that everyone gets a piece of warm and fluffy cornbread. These cornbread muffins are slightly sweet being sweetened with honey, but not too sweet. These muffins make a great side dish to any meal, I like to serve them warm with butter along side a bowl of chili.
These muffins are made like a regular cornbread batter, with equal parts flour and cornmeal. Honey is used in these muffins to sweeten them a little, but if you would rather your cornbread to be more savory, you can leave it out. Whisk all of the ingredients together in one bowl until a smooth batter forms. Divide the batter evenly between twelve greased muffin tins. Bake until golden brown and they come out clean with a toothpick.
Cornbread Muffins
Ingredients
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1 cup milk
- 1/2 cup butter, melted
- 1/4 cup honey
- 1 large egg
Instructions
- Preheat oven to 350 F. Grease a 12 cup muffin tin. In a large bowl, whisk together flour, cornmeal, salt and baking powder.
- Add in milk, melted butter, honey and an egg. Whisk until smooth. Evenly divide the batter between the prepared muffin cups. Bake for 15-20 minutes.
