Classic Sweet Potato Casserole

Sweet and delicious classic sweet potato casserole with brown sugar, all topped off with mini marshmallows. Sweet potato casserole is a classic to make for Thanksgiving, Christmas, or Easter dinner. Sweet potatoes are mashed with butter and brown sugar, then it is topped with a bag of mini marshmallows and baked until the marshmallows are browned. You can add in any  other ingredients that you would like, such as pecans or chopped nuts.

The sweet potatoes are first peeled, diced and boiled until they are fork tender. Drain the potatoes and mash them using either a hand mixer or potato masher . Mix the potatoes with the remaining ingredients, except for the marshmallows. Spread the potato mixture into a greased baking dish. Top with the marshmallows and bake until the marshmallows are lightly browned.

Ingredients
  

  • 3 pounds sweet potatoes, peeled and diced
  • 1/2 cup butter
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 ( 10 oz.) bag mini marshmallows

Instructions
 

  • 2. Bring to a boil over medium- low heat. Cook until the potatoes are fork tender. Drain and place potatoes into a large bowl.
  • Mash potatoes with butter, brown sugar, cinnamon, and salt until smooth.
  • Spread the potatoes evenly into a large greased baking dish. Top with marshmallows. Bake for 20-25 minutes.
