Soft and fluffy homemade vanilla cupcakes filled with sprinkles. These easy funfetti cupcakes are a classic cupcake flavor for just about any holiday or occasion, such as a birthday. They are so quick and easy to make, all of the ingredients are whisked together in a large bowl until smooth. And they are topped off with a creamy vanilla buttercream frosting.

The cupcake batter is quick and easy to make, all of the ingredients are whisked together in a large bowl until smooth. Fold sprinkles into the batter, and divide it between a paper lined muffin pan. Bake until each cupcake comes out clean with a toothpick. Let cool completely on a cooling rack before frosting. To make the classic buttercream frosting, all of the ingredients are mixed together in a large bowl until smooth. Frost each cupcake, and decorate with more sprinkles.

Classic Funfetti Cupcakes

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sprinkles
Ingredients for Buttercream Frosting
  • 1/2 cup butter, softened
  • 2-3 cups powdered sugar
  • 2-4 tablespoons milk
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, salt, and baking powder. Add in milk, vegetable oil, eggs, and vanilla extract. Whisk until smooth.
  2. Fold in the sprinkles. Evenly divide the cupcake batter between the prepared muffin pan. Bake for 15-18 minutes. Let cool completely before frosting.
  3. For the frosting, mix all of the ingredients together until smooth. Pipe or spread frosting onto each cupcake.
