Chocolate Chip Pudding Cookie Bars

Soft and chewy cookie bars filled with chocolate chips. These easy chewy cookie bars are made with a box of vanilla pudding mix. There is no pudding taste in the cookie bars, but it gives them a more soft and chewy texture. Everyone will love these easy cookie bars for just about any occasion.

The cookie dough is made similar to a classic chocolate chip cookie dough, except with the addition of dry vanilla pudding mix whisked into the flour mixture. Once the cookie dough is prepared, press it evenly into a greased square baking dish. Bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Chocolate Chip Pudding Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 ( 3 oz.) package vanilla pudding mix
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, and baking soda. In a large bowl, combine butter with both granulated and brown sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the chocolate chips. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
