Easy fluffy homemade pancake muffins filled with chocolate chips. These easy pancake cups are perfect to make for any weekday, or weekend breakfast. The pancake batter is like a classic pancake batter, with chocolate chips mixed into the batter. Evenly divide the pancake batter between a paper lined muffin pan, and bake until each cup comes out clean with a toothpick. Let cool slightly before serving.

Chocolate Chip Pancake Muffins

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk flour, sugar, baking powder, and salt together. Add in melted butter, milk, and eggs, whisk until smooth.
  • Fold in the chocolate chips. Evenly divide the batter between the prepared muffin pan. Bake for 15-20 minutes.
