Soft and chewy classic oatmeal cookies are the perfect easy cookie that everyone loves. Oats are mixed into the cookie dough, giving them a soft and chewy texture. These easy oatmeal cookies are perfect to bake for any holiday or occasion. It only takes a few minutes to prepare the cookie dough, and you can easily store the cookie dough in the freezer to have the dough on hand for whenever you want to bake some homemade cookies.

The dough for these cookies is easy to make, the butter is first combined with brown and granulated sugar until the mixture is fluffy. An egg and vanilla extract are then added to the mixture until it is smooth. A mixture of flour and quick oats is mixed into the cookie dough until a thick dough forms. Roll the cookie dough into balls, and place them onto a large ungreased baking sheet. Bake until the center of each cookie comes out clean with a toothpick. Let the cookies cool on a cooling rack completely before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda.
  • In a large bowl, combine butter with both sugars until fluffy. Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until all of the flour is combined.
  • Roll the cookie dough into balls, and place them onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
