Cherry Snickerdoodle Cookies

Soft and chewy snickerdoodle cookies filled with dried cherries. These cookies are sweet and delicious. They are filled with tons of cherry flavor, and rolled into a mixture of cinnamon and granulated sugar. They are a delicious summer themed twist on a classic snickerdoodle cookie.

The cookie dough is made similar to a classic sugar cookie dough, except with dried cherries folded into the cookie dough. The cookies are rolled into a mixture of cinnamon and granulated sugar before baking, giving them the traditional snickerdoodle flavor. They are baked until they are fully cooked through. Let them cool completely on a cooling rack before serving.

Cherry Snickerdoodle Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cherries
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Fold in the dried cherries. In a shallow dish, combine granulated sugar and ground cinnamon.
  • Roll the cookie dough into balls, and roll into the cinnamon sugar mixture. Place cookies onto a large ungreased baking sheet. Bake for 10-12 minutes.
