Mashed potatoes are a classic side dish for any meal. But cheese makes everything better, especially in creamy mashed potatoes. These creamy cheesy mashed potatoes are quick enough to make as a weeknight side dish. Because these mashed potatoes can easily be made ahead of time, they are perfect for a holiday meal side dish that you can easily prep the day ahead. These mashed potatoes are creamy and baked with a cheesy topping perfect for any meal.
The potatoes need to first be cooked in a pot of boiling water over medium heat until they are fork tender. Drain the potatoes and place them into a large bowl along with butter, salt and pepper. To mash the potatoes, I prefer to use a hand mixer because it creates smoother mashed potatoes. But if you prefer less smooth potatoes, then a potato masher will work better. Fold 1 cup of the shredded cheddar cheese into the mashed potato mixture. Spread the mashed potatoes out into a greased baking dish. At this point, you can cover the potatoes and refrigerate it until you are ready to make it. When you are ready to bake the mashed potatoes, top with the remaining cup of shredded cheddar cheese. Bake until the cheese is melted and the mashed potatoes are heated through.
Cheesy Mashed Potatoes
Ingredients
- 3 pounds russet potatoes, peeled and diced into 1-inch cubes
- 1/2 cup butter
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 cups shredded cheddar cheese, divided
Instructions
- Preheat oven to 350 F. Peel and dice potatoes into 1-inch cubes and place them into a large saucepan. Cover the potatoes with water and bring to a boil over medium heat.
- Let potatoes simmer for about 15-20 minutes, or until they are fork tender. Drain the potatoes and place them into a large bowl. Using either a potato masher or a hand mixer, mash potatoes with the butter, salt and pepper. Mash until desired consistency.
- Fold in 1 cup of the shredded cheese into the mashed potatoes with a spatula. Spread the potato mixture out into a greased baking dish. Top with the remaining shredded cheddar cheese and bake for 30-35 minutes.
