Soft and chewy cookie bars made from a box of carrot cake mix, and filled with white chocolate chips. These easy cookie bars are perfect to bake for a fun Easter or spring themed dessert. All you need is four simple ingredients to make them, everyone will love the soft and chewy texture of the bars and the carrot cake flavor.

The only four ingredients that you need for these cookies is a box of carrot cake mix, eggs, vegetable oil, and white chocolate chips. All four ingredients are mixed into a large bowl until smooth. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars.

  • 1 ( 15 oz.) box carrot cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup white chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the chocolate chips.
  • Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
