Fluffy and sweet peppermint pancakes with crushed candy canes mixed into the pancake batter. These pancakes will make the perfect Christmas morning breakfast for your whole family. The candy canes give these pancakes a sweet and delicious flavor that is perfect to enjoy during the holiday season. Serve warm with your favorite pancake toppings, such as classic maple syrup, or even whipped cream for a sweet Christmas breakfast treat.

The pancake batter for these pancakes is made from a homemade fluffy pancake batter. But if you are short on time, you can also use a premade pancake mix and mix crushed candy canes into the batter. These pancakes are so quick and easy to make, all of the ingredients are mixed together in the same bowl. Crushed candy canes are folded into the pancake batter. The candy canes will make the pancake batter turn a pink color. Cook on a skillet or griddle until bubbles start to form. Flip and cook until the other side is lightly golden browned. Serve warm topped with butter and syrup.

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 2 cups milk
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1/2 cup crushed peppermint candy

Instructions
 

  • In a large bowl, whisk together flour, sugar, salt and baking powder. Add in milk, melted butter and eggs and whisk until smooth. Fold in crushed candy peppermint candy.
  • Heat a large skillet or griddle over medium heat and grease with non-stick cooking spray. Ladle 1/4 cup batter onto the hot skillet and cook until lightly browned on both sides.
