Candy Cane Oreo Cookie Bars

Soft and chewy cookie bars filled with crushed candy canes and Oreo cookies. These cookie bars are perfect for baking this Christmas. It is so quick and easy to make these easy cookie bars, it is started with a sugar cookie dough with candy canes and Oreo cookies mixed into the cookies. Everyone will love the soft and chewy texture of the bars, and the chocolate and peppermint flavors mixed throughout the cookie dough.

The dough for these cookies is similar to a classic sugar cookie dough, but with crushed candy canes and crushed Oreo cookies mixed into the cookie dough. Once the cookie dough is prepared, it is pressed into a square baking dish, and baked until the center comes out clean with a toothpick. Let the cookie bars cool completely before cutting into bars and serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon peppermint extract
  • 1/2 cup crushed candy canes
  • 1/2 cup crushed Oreo cookies

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter and sugar until smooth.
  • Add in the egg and peppermint extract, and mix until smooth. Add in the flour mixture, and mix until it is all combined. Fold in crushed candy canes and crushed Oreo cookies.
  • Press the cookie dough into a greased 8-inch square baking dish. Bake for 15-20 minutes.
