Soft and chewy peanut butter cookies made with a box of cake mix and filled with chocolate chips. The cookies are also made green for St. Patrick’s day. The cookies are rolled in a mixture of granulated sugar and ground cinnamon before baking, giving them a delicious snickerdoodle flavor. They make the perfect easy treat to bake this St. Patrick’s day.
The cookie dough is made by mixing the cake mix with peanut butter, eggs and vegetable oil until smooth. Green food coloring is added to the cookie dough until it is fully green. Fold in chocolate chips, and roll the cookie dough into balls. Roll each one into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet. Bake until they are fully cooked through.

Cake Mix St. Patrick's Day Peanut Butter Chocolate Chip Snickerdoodle Cookies
Ingredients
- 1 ( 15 oz.) box yellow cake mix
- 1/2 cup peanut butter
- 2 large eggs
- 1/2 cup vegetable oil
- green food coloring
- 1 cup chocolate chips
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together cake mix, peanut butter, eggs, and vegetable oil until smooth. Add in the food coloring, and mix until it is fully green. Fold in the chocolate chips.
- In a shallow dish, combine granulated sugar and ground cinnamon. Roll the cookie dough into balls and roll in the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
