Cake Mix Red Velvet Cookie S’mores

Soft and chewy red velvet cookies sandwiched with marshmallows and chocolate. A box of red velvet cake mix is used to make this simple cookies. After they have baked, they are topped with marshmallows and chocolate, and sandwiched with more red velvet cookies. They are perfect for a fun summer themed treat, or a delicious Valentine’s day treat.

The only five ingredients that you need for these cookies is a box of red velvet cake mix, eggs, vegetable oil, marshmallows, and some heart shaped chocolates. The cake mix is mixed with the eggs and vegetable oil until smooth. Use a cookie scoop to place the cookie dough onto a large ungreased baking sheet. Bake until the cookies are fully cooked through. Remove half of the cookies, and set them aside. To the remaining cookies on the baking sheet, place one marshmallow and one heart chocolate on each cookie. Bake for just a couple of minutes to slightly soften the chocolate. Remove from the oven, and sandwich with the remaining half of cookies.

Ingredients
  

  • 1 ( 15 oz.) box red velvet cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • marshmallows
  • heart chocolates

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, whisk together cake mix, eggs, and vegetable oil until smooth. Use a cookie scoop to place the cookie dough onto a large ungreased baking sheet at least 2-inches apart.
  • Bake for 10-12 minutes. Remove half of the cookies and set aside. Place one marshmallow, followed by one heart shaped chocolate on each cookie on the baking sheet. Bake for another 2-3 minutes. Remove from the oven, and sandwich each cookie with the remaining cookies.
