Soft and chewy cookies for Halloween made with a box of spice cake mix and filled with pumpkin puree. The cookies are decorated after they are baked using candy eyeballs. They make the perfect easy and fun treat to bake this Halloween or fall.
The only five ingredients that you need is a box of spice cake mix, pumpkin puree, eggs, vegetable oil, and candy eyes. Mix all of the ingredients, except for the candy eyes together until smooth. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through. Remove from the oven, and top with candy eyes.
Cake Mix Pumpkin Monster Eye Cookies
Ingredients
- 1 ( 15 oz.) box spice cake mix
- 1/2 cup pumpkin puree
- 2 large eggs
- 1/2 cup vegetable oil
- candy eyes
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together cake mix, pumpkin puree, eggs and vegetable oil until smooth.
- Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes. Remove from the oven, and decorate with candy eyes.
