Cake Mix Mint White Chocolate Chip Cookie Cups

Soft and chewy cookie cups made with a box of cake mix and filled with mint extract and white chocolate chips. Everyone will love the soft and chewy texture of the cookie cups and the delicious mint and white chocolate flavors. They make the perfect easy treat for any occasion.

The cookie dough is made by mixing a box of cake mix with eggs, vegetable oil and mint extract until smooth. Food coloring is mixed into the cookie dough until it is green. Fold in the white chocolate chips. Divide the cookie dough between a paper lined muffin pan. Bake until each cookie cup comes out clean with a toothpick.

Ingredients
  

  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup white chocolate chips

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, mix together cake mix, eggs, vegetable oil, and mint extract until smooth. Stir in the green food coloring until green. Fold in the white chocolate chips.
  • Evenly divide the cookie dough between the paper liners. Bake for 12-15 minutes.
