Soft and chewy mint chocolate chip cookie bars filled with mint flavored M&Ms. These easy cookie bars are started from a box of cake mix, and filled with mint flavoring, chocolate chips and M&Ms candy. They are perfect to bake this St. Patrick’s day for a fun and easy treat that everyone will love.

The cookie dough is made by mixing a box of cake mix with eggs and vegetable oil until smooth. Mint extract and green food coloring are mixed into the cookie dough. Chocolate chips and mint flavored M&Ms are folded into the cookie dough. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Ingredients
  

  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup chocolate chips
  • 1/2 cup mint M&Ms

Method
 

  1. Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Add in the mint extract and green food coloring, and mix until it is fully green.
  2. Fold in the chocolate chips and mint M&Ms. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
