Cake Mix Espresso Chip Crinkle Cookies

Soft and chewy cookies made from a box of cake mix and filled with espresso baking chips. The baking chips gives these cookies a delicious coffee flavor. The cookies are rolled in a dish of powdered sugar before baking, making them more soft and chewy, and gives them a crinkle look. Everyone will love these easy cookies for any occasion.

The only five ingredients that you need for these cookies is a box of yellow cake mix, eggs, vegetable oil, espresso baking chips, and powdered sugar. In a large bowl, mix all of the ingredients except for the powdered sugar together until combined. Roll the cookie dough into balls, and roll each one into a dish of the powdered sugar. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup espresso baking chips
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the espresso baking chips. Place the powdered sugar into a shallow dish.
  • Roll the cookie dough into balls, and roll into the powdered sugar. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
