Chewy chocolate brownie cups topped with soft and chewy cake mix cookie that is filled with Easter themed sprinkles and Easter themed M&Ms, and rolled into a mixture of granulated sugar and ground cinnamon. The brownie batter is made by mixing all of the ingredients into a large bowl until smooth. Then divide the mixture between a paper lined muffin pan. For the cookie dough, mix the cake mix with eggs, vegetable oil, sprinkles and M&Ms until smooth. Roll the dough into balls, and roll each one into a mixture of granulated sugar and ground cinnamon. Place the cookie dough over each brownie cup. Bake until each brownie cup comes out clean with a toothpick.
Cake Mix Easter M&M Snickerdoodle Brookie Cups
Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 large eggs
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
- 1 ( 15 oz.) box yellow cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup Easter sprinkles
- 1 cup Easter M&Ms
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in the eggs, melted butter, and vanilla extract until smooth.
- Evenly divide the brownie batter between the prepared muffin pan. In a large bowl, mix together the cake mix, eggs, and vegetable oil until smooth. Fold in the sprinkles and M&Ms.
- In a shallow dish, whisk together the granulated sugar and ground cinnamon. Roll the cookie dough into balls, and roll each one into the cinnamon sugar mixture. Place the cookies over each brownie cup. Bake for 20-25 minutes.
