Roll the cookie dough into balls and roll in a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

- 1 ( 15 oz.) box yellow cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup chopped Andes mints
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 F. In a large bowl, combine cake mix, eggs, and vegetable oil until smooth. Fold in the Andes mints. In a shallow dish, combine granulated sugar and ground cinnamon.
- Roll the cookie dough into balls and roll into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
