Cake Mix Andes Mint Cookie Bars

Soft and chewy cookie bars made with a box of cake mix and filled with chopped up Andes mint candies. They have a delicious mint chocolate flavor that go together perfectly. Everyone will love these easy four ingredient cookie bars for just about any holiday or occasion.

The only four ingredients that you need is a box of yellow cake mix, eggs, vegetable oil, and chopped Andes mints. Mix all four ingredients together until smooth. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup chopped Andes mints

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the Andes mints.
  • Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
