Two of my favorite desserts, brownies and cheesecake combined to make this delicious dessert. Chewy chocolate brownies topped with a creamy classic cheesecake. It is made like a classic cheesecake, but instead of using a classic graham cracker crust, a chewy chocolate brownie bottom is used. This brownie bottom cheesecake is a delicious combination of these two classic desserts.

For the brownie bottom layer, it is made like a classic chewy brownie. But instead of being baked in a square baking dish, it is baked in a round spring form pan. The brownie layer is baked before the cheesecake layer is poured on top. It ensures that the brownie layer will cook fully. For the cheesecake layer, it is made similar to a classic cheesecake. Softened cream cheese, sugar, eggs and vanilla extract are beat together until a smooth mixture forms. Pour it over the baked brownie layer and bake until the cheesecake layer is cooked through. Let cool completely before refrigerating until ready to serve or at least 4 hours.

Ingredients for Brownie Layer

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract

Ingredients for Cheesecake Layer

  • 2 ( 8 oz.) packages cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350 F. Grease a 9-inch spring form pan and set aside. In a large bowl, whisk together flour, sugar, cocoa powder, salt and baking powder.
  • Whisk in melted butter, eggs and vanilla extract. Pour brownie batter into the prepared spring form pan. Bake for 20-25 minutes, until the center comes out clean.
  • For the cheesecake layer, using either a hand or a stand mixer, beat softened cream cheese with granulated sugar until fluffy.
  • Add in eggs and vanilla extract, beat until smooth. Pour the cheesecake mixture over the brownie layer. Bake for another 35-40 minutes.
