Christmas is just a couple of weeks away, which means that the Christmas day dinner needs to be planned. Mashed potatoes are a classic to have at every holiday dinner. But if you want to find a non traditional potato side dish this broccoli mashed potato casserole is just what you are looking for. Creamy mashed potatoes with broccoli florets and cheddar cheese, topped off with a cheesy bread crumb crust. You can even make this casserole a day ahead of time by preparing it up until baking, refrigerate until you need it and bake as usual the next day.

The potatoes need to first be peeled and cubed into 1-inch pieces. Boil the potato cubes in a large pot of water over medium heat and let them cook until the potatoes are fork tender. Drain the potatoes and place them into a large bowl. Mash the potatoes with the butter, salt and pepper using a hand mixer until they are smooth. Cook the broccoli florets according to the package directions and fold the cooked broccoli along with 1/2 cup of the cheese into the potato mixture. Spread the mashed potatoes out into a greased baking dish. Top with the remaining shredded cheese and bread crumbs. Bake until the cheese is melted.

Broccoli Mashed Potato Casserole

Ingredients
  

  • 3 pounds russet potatoes, peeled and cubed
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 12 oz. frozen broccoli florets
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup bread crumbs

Instructions
 

  • Preheat oven to 350 F. Peel and dice potatoes into 1-inch pieces. Place potatoes into a large saucepan. Cover with water. Bring potatoes to a boil over medium heat.
  • Let potatoes cook for about 15-20 minutes, or until fork tender. Drain and place potatoes into a large bowl. Cook broccoli according to package directions, drain. Add butter, salt and pepper to potatoes and mix with a hand mixer until smooth.
  • Fold in cooked broccoli florets and 1/2 cup shredded cheddar cheese into the mashed potatoes. Spread mixture out into a greased baking dish. Top with the remaining shredded cheddar cheese and breadcrumbs. Bake for 30 minutes.
