Broccoli and cheddar cheese is a classic flavor combination because the flavors go so well with each other. Only three ingredients are needed to make these cheesy quesadillas and take less than 15 minutes from start to finish. Serve with carrot sticks or your favorite chips for a quick and easy healthy light lunch or dinner.

The only ingredients needed to make these delicious quesadillas are broccoli florets, flour tortillas and shredded cheddar cheese. You can use either fresh or frozen broccoli florets for this. Prepare them first according to the package directions, then chop them into smaller pieces to better fit in the tortillas. Evenly divide the broccoli florets between half of the flour tortillas. Sprinkle shredded cheese on top along with the remaining tortillas. You can use any type of shredded cheese that you would like for these, such as mozzarella or even pepper jack for a more spicy quesadilla. Cook the quesadillas in a medium skillet over medium-low heat. Until both sides are lightly browned and the cheese has melted.
