Creamy and easy macaroni salad with all of the classic flavors of a BLT sandwich. This macaroni salad makes a great summer side dish, or it tastes great as a picnic or potluck dish. Creamy pasta is mixed with tomatoes, lettuce, and crispy bacon to create the delicious flavors of a classic summer sandwich. You can make this dish ahead of time, and keep it refrigerated for up to two days before you want to serve it.
For the pasta, you can use any small shaped pasta that you would like, I used elbow pasta for this. Cook the pasta according to package directions, drain and rinse with cold water. Mix the pasta with mayonnaise, tomatoes, lettuce, bacon, salt, pepper, and garlic powder. Cover and store the pasta salad in the refrigerator until you are ready to serve.
BLT Macaroni Salad
Ingredients
- 16 oz. elbow pasta
- 2 cups mayonnaise
- 1 pint cherry tomatoes, halved
- 1 head lettuce, chopped
- 1/2 cup cooked and crumbled bacon
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
Instructions
- Cook pasta according to package directions, drain and rinse with cold water. Mix cooked pasta with the remaining ingredients. Cover and refrigerate until serving.
