Bell Pepper Potato Salad

Creamy and delicious potato salad filled with relish, chives, and diced bell peppers. This easy potato salad is perfect to take along to any picnic, potluck, or any other summer themed occasion. It is perfect to make ahead of time, you can easily prepare the potato salad up to a day or two before you need it.

The potatoes are first peeled and cut into 1-inch cubes. Boil the potatoes until they are fork tender. Drain the potatoes, and rinse with cold water to stop the cooking process. Mix the potatoes with the remaining ingredients. Either serve right away, or store in the fridge until you are ready to serve.

Bell Pepper Potato Salad

Ingredients
  

  • 2 pounds russet potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 1 tablespoon mustard
  • 1/4 cup relish
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon chopped chives
  • 1 large red bell pepper, diced

Instructions
 

  • Place the diced potatoes into a large saucepan and cover with water. Bring to a boil over medium heat, and cook until they are fork tender. Drain the potatoes and place into a large bowl.
  • Mix the potatoes with the remaining ingredients. Refrigerate until serving.
