Easy tater tot casserole for breakfast. This easy breakfast casserole is filled with crispy tater tots, eggs, bacon bits, and cheddar cheese. It is the perfect breakfast casserole to make for a weekend brunch, or holiday breakfast such as Easter or Christmas. Everyone will love this cheesy potato egg bake for every occasion.

To make this cheesy casserole, frozen tater tots are first spread out into a greased baking dish. In a bowl, whisk eggs with milk and seasonings. Pour the egg mixture over the tater tots, then sprinkle with the bacon. Bake until the egg is fully cooked, and the tater tots are crispy. Top with shredded cheddar cheese, and bake until the cheese has fully melted.

Bacon Tater Tot Breakfast Casserole

Ingredients
  

  • 32 oz. frozen tater tots
  • 6 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup cooked and crumbled bacon
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together eggs, milk, salt, and pepper. Evenly spread the tater tots into a greased baking dish.
  • Pour the egg mixture over the tater tots. Top with bacon. Bake for 45-50 minutes. Remove from the oven, and top with the cheese. Bake for another 10 minutes.
