Red potatoes are my favorite types of potatoes to oven-roast. They are really simple to make, just red potatoes, olive oil and the seasonings of your choice. For this side dish, I wanted a more spicy vegetable to serve them with tacos or another tex-mex meal. These potatoes are made spicy with paprika and ground cumin, they even taste great wrapped in a tortilla as a vegetarian potato taco. Since all of the ingredients are vegan and gluten-free, they make a great side dish for everyone.
Cut the red potatoes into quarters and mix with olive oil and all of the seasonings. Spread the potatoes out in a baking dish in a single layer. Roast the potatoes in the oven for 40-45 minutes, or until they are crispy and fork tender. I used paprika and ground cumin to make them spicy, but if you would rather a more milder side dish you can reduce the amount of spice in them. Serve these potatoes any way that you want for a delicious tex-mex side dish.
Spicy Roasted Red Potatoes
Ingredients
- 2 pounds red potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Preheat oven to 400 F. Dice potatoes into 1-inch cubes and mix with olive oil and seasonings.
- Spread potatoes out into a baking dish in a single layer. Bake for 40-45 minutes.
