Funnel cakes are a delicious summer treat. But instead of a big funnel cake, these funnel cakes are made bite-sized. Making them a fun and delicious treat to enjoy this summer. The funnel cake batter is fried in vegetable oil until the funnel cake bites are lightly browned. Topped with powdered sugar, just like a classic funnel cake. To serve, you can dip the bites in chocolate or other dessert dip.
The funnel cake batter is prepared like a classic funnel cake. When you are ready to fry, heat vegetable oil about 1-inch deep in a large deep saucepan over medium heat. Using a cookie scoop, drop tablespoons of batter into the hot oil. Fry until lightly browned on all sides. Remove from oil and drain on a wire rack over paper towels. Sift powdered sugar on top.

Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoons granulated sugar
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • Powdered sugar

Instructions
 

  • In a large bowl, whisk together flour, salt, baking powder, and sugar. Add in eggs, milk, and vanilla extract, whisk until smooth.
  • Heat vegetable oil in a large saucepan over medium heat. Cook until browned on all sides. Set on a wire rack over paper towels to drain. Sprinkle with powdered sugar.
