Meatloaf Mashed Potato Casserole

Classic meatloaf topped with creamy mashed potatoes and covered with shredded cheddar cheese. Meatloaf is a classic meal that is usually served with a side of mashed potatoes. But instead of these potatoes being on the side of the meal, they are topped on top of the meatloaf along with cheese. Creating a cheesy and delicious meal that the whole family will love.

The classic meatloaf is made with ground beef combined with breadcrumbs, seasonings, egg, milk, and ketchup. The meat mixture is pressed into a greased baking dish. Bake until the meat is no longer pink. Top with creamy and buttery homemade mashed potatoes. The mashed potatoes are topped with shredded cheddar cheese. Bake until the cheese has fully melted.

Ingredients
  

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1 large egg
  • 1/2 cup milk
  • 2 tablespoons ketchup
  • 1 tablespoon worcestershire sauce
  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 F. In a large bowl, combine ground beef, breadcrumbs, seasonings, egg, milk, ketchup, and worcestershire sauce. Press mixture out into a greased baking dish. Bake for 40-50 minutes.
  • Place potatoes into a large saucepan, cover with water and bring to a boil over medium heat. Simmer until potatoes are fork tender. Drain. Mash potatoes with butter, salt, and pepper. Evenly spread potatoes over meatloaf. Sprinkle with shredded cheddar cheese. Bake for another 20-25 minutes.
