Loaded baked potato rounds topped with cheese, crispy bacon, and sour cream. These potato rounds are the perfect appetizer to serve for game day, or any other occasion. You can enjoy all of the classic flavors of a delicious loaded baked potato, but in bite sized portions, perfect for sharing. Serve these delicious potato bites topped with your favorite baked potato toppings, such as green onions or your favorite type of cheese.

 
To start these potato rounds, russet potatoes are sliced into 1/2 inch thick rounds. Brush with olive oil and season with salt and pepper. Bake until the potatoes are fork tender and crispy. Once they come out of the oven, top with cheese, cooked and crumbly bacon along with any other ingredients that you would usually put on baked potatoes. Bake for a few more minutes, until the cheese has fully melted. Top with sour cream before serving.

Ingredients
  

  • 2 large russet potatoes
  • 1 tablespoon olive oil
  • salt and pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • Sour cream

Instructions
 

  • Preheat oven to 400 F. Slice potatoes into rounds and place onto a large greased baking sheet. Brush each potato round with olive oil and season with salt and pepper.
  • Bake for 30-35 minutes. Top each with cheese, and bacon. Bake for another 5 minutes. Top with sour cream.
