Irish Soda Bread Muffins

Irish soda bread is a classic Irish dish, that is usually served at St. Patricks day. But instead of baking a whole loaf of Irish soda bread, these muffins are the perfect individual size portions for a weeknight side dish. They use basic ingredients that you may already have at home. Just one mixing bowl is all you need to prepare these muffins. And they go perfectly with just about any meal.

Just one bowl is needed to make these easy dinner muffins. And only six easy ingredients. All of the ingredients are whisked together in a large bowl until a smooth batter forms. Using a cookie scoop, evenly divide the muffin batter between the prepared muffin pan. Bake until the tops are lightly golden browned and they come out clean with a toothpick.

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 large egg
  • 1/2 cup butter, melted
  • 1 1/2 cups milk

Instructions
 

  • Preheat oven to 400 F. Grease a 12 cup muffin pan with non-stick cooking spray. In a large bowl, whisk together flour, salt, and baking soda.
  • Add in eggs, melted butter, and milk. Whisk until smooth. Evenly divide batter between the prepared muffin tin. Bake for 15-20 minutes.
