Fluffy and healthy pancakes, these oatmeal pancakes are delicious with the added protein of oatmeal. Pancakes are a favorite for weekday breakfasts, weekend bruches, or even breakfast for dinner. They are just as fluffy and delicious as regular pancakes, but made healthier with the addition of oats. After you have made the pancakes and allowed them to cool down, you can store them in ziplock bags and freeze. So that you can enjoy fresh pancakes any day of the week.
The batter for these pancakes is simple to make. All of the ingredients are whisked together in a large bowl until smooth. Heat a skillet or griddle over medium heat and spray with non-stick cooking spray, or grease with butter. Ladle about 1/4 cup batter for each pancake onto the hot skillet and let cook on both sides until lightly browned. Serve with butter and syrup.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 2 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 2 cups milk

Instructions
 

  • In a large bowl, whisk together flour, oats, brown sugar, salt, baking powder, and baking soda. Add in eggs, melted butter, and eggs. Whisk until smooth.
  • Heat a lightly greased skillet or griddle over medium heat. Ladle pancake batter onto hot skillet and cook until bubbles start to form. Flip and cook until the other side is lightly browned.
