Sweet fluffy cupcakes filled with cherries in every bite. These cherry cupcakes are made using maraschino cherries and the liquid from the jar of cherries. To create a sweet cupcake with tons of delicious cherry flavors. All topped with a sweet cherry buttercream frosting made from butter, powdered sugar and more cherry juice. The cherry juice adds more cherry flavor to the cupcakes and it makes it have a pink color. Store the cupcakes in an airtight container at room temperature.
The cupcake batter is made similar to a classic vanilla cupcake, except for the addition of cherry juice and chopped maraschino cherries. Chopping the maraschino cherries will make sure that you get a bite of cherries in every bite. After the cupcakes have baked and cooled down completely, prepare the frosting. The cherry buttercream frosting is made by combining softened butter with powdered sugar, cherry juice and milk as needed to thin. Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 cup milk
- 1/2 cup cherry juice
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ( 10 oz.) jar maraschino cherries, chopped
Ingredients for Cherry Buttercream Frosting
- 1/2 cup butter, softened
- 2 1/2-3 cups powdered sugar
- 2 tablespoons cherry juice
- 1-2 tablespoons milk
Instructions
- Preheat oven to 350 F. Line a 12 cup muffin pan with cupcake liners. Set aside. In a large bowl, whisk together flour, sugar, salt and baking powder.
- Add in milk, cherry juice, vegetable oil, eggs and vanilla extract, whisk until smooth. Fold in chopped cherries. Evenly divide cupcake batter between the cupcake liners. Bake for 18-22 minutes. Let cool completely.
- For the frosting, beat softened butter with powdered sugar, cherry juice and milk until smooth. Pipe or spread frosting onto cupcakes.
