These cheesy mashed potato patties are a great way to use up some leftover mashed potatoes. Mashed potato patties are cooked similar to pancakes on the stove-top. You can also add in other ingredients to these patties, such as bacon, or you can use mozzarella cheese instead of cheddar. There are many ways that you can customize these mashed potato patties. These patties make the perfect side dish to go along side any meal.
This recipe is great for using up any leftover mashed potatoes that you have leftover from the holidays. Egg, flour, breadcrumbs and shredded cheddar cheese are mixed into the leftover mashed potatoes. And formed into patties. Cook the patties on a large lightly greased skillet over medium heat until the cheese has melted and the patties are lightly browned on both sides.
Mashed Potato Patties
Ingredients
- 4 cups leftover mashed potatoes
- 1 large egg
- 1/2 cup all-purpose flour
- 1/2 cup Italian seasoned breadcrumbs
- 1/2 cup shredded cheddar cheese
Instructions
- In a large bowl, combine mashed potatoes, egg, flour, breadcrumbs and cheese. Mix until combined. Form mixture into patties and set onto plates.
- Spray a large skillet with non-stick cooking spray. Cook mashed potato patties over medium heat until lightly golden browned. Flip and cook the other side until both sides are lightly golden browned.
