Sweet potato casserole is one of the most loved side dishes to serve on Thanksgiving. But is is quick and easy to make a simple sweet potato casserole appetizer that still has all of the classic flavors of a sweet potato casserole. The sweet potatoes are coated with brown sugar and cinnamon and topped with marshmallows. If you prefer, you can even add pecans on top of the marshmallows. These quick and easy sweet potato casserole bites make a delicious appetizer to enjoy on Thanksgiving day before your main meal.

Sweet potatoes are sliced into round slices and mixed with brown sugar, cinnamon and olive oil. Place each sweet potato slice in a single layer onto a large greased baking sheet. Bake until the sweet potatoes are fork tender and lightly browned. Top each sweet potato slice with mini marshmallows and bake for another couple of minutes. You can also broil the marshmallows for a minute to brown it slightly.

Sweet Potato Casserole Bites

Ingredients
  

  • 2 large sweet potatoes, sliced
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons olive oil
  • mini marshmallows

Instructions
 

  • Preheat oven to 400 F. Slice sweet potatoes into slices. In a large bowl, combine brown sugar, cinnamon and olive oil. Place sweet potato slices onto a large greased baking sheet in a single layer.
  • Bake for 15 minutes. Top with mini marshmallows and bake for another 2-3 minutes.
