The cookie dough is made like a classic oatmeal raisin cookie dough, except for the addition of dry vanilla pudding mix whisked into the dry ingredients. Roll the cookie dough into balls and place onto a large ungreased baking sheet and bake until the cookies are fully cooked through.

Oatmeal Raisin Pudding Cookies
Ingredients
- 1 cup all-purpose flour
- 1 1/2 cups quick oats
- 1 ( 3 oz.) box vanilla pudding mix
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup raisins
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, pudding mix, salt, and baking soda. In a large bowl, mix together butter and both sugars until fluffy. Add in egg and vanilla extract and mix until smooth.
- Add in the flour mixture and mix until it is fully combined. Fold in the raisins. Roll the cookie dough into balls and place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
