The cookie dough is made by mixing cake mix with eggs, vegetable oil and quick oats. Then fold in the raisins. Roll the cookie dough into balls and roll each one into a dish of granulated sugar and ground cinnamon. Place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.
Carrot Cake Mix Oatmeal Raisin Snickerdoodle Cookies
Ingredients
- 1 ( 15 oz.) box carrot cake mix
- 1 cup quick oats
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup raisins
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together cake mix, oats, eggs and vegetable oil until smooth. Fold in the raisins. In a shallow dish, combine granulated sugar and ground cinnamon.
- Roll the cookie dough into balls and place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
