Monster Eye Reese’s Pieces Snickerdoodle Cookies

Soft and chewy peanut butter snickerdoodle cookies filled with Reese’s pieces, and topped with candy eyes for Halloween. Everyone will love the soft and chewy texture of the peanut butter cookies and the delicious peanut butter and snickerdoodle flavors. They make the perfect easy Halloween themed dessert.

The cookie dough is made like a classic peanut butter cookie dough, except for the addition of Reese’s pieces. Roll the cookie dough into balls, and roll each one in a dish of granulated sugar and ground cinnamon. Place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through. Remove from the oven and top with candy eyes.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup Reese's pieces
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • candy eyes

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix together butter, peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in the egg and vanilla extract and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the Reese's pieces. In a shallow dish, combine granulated sugar and ground cinnamon.
  • Roll the cookie dough into balls and roll each one in the cinnamon sugar mixture. place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes. Remove from the oven and top with candy eyes.
