Monster Eye Buttercream Truffles

Easy and delicious buttercream truffles covered in melted white chocolate made with green food coloring. They are also topped with candy eyes. Everyone will love these easy and sweet homemade candies this Halloween season.

The buttercream truffles is made by mixing butter with powdered sugar and vanilla extract until a thick dough forms. Roll the mixture into balls and freeze while you melt the chocolate. Melt the chocolate chips in the microwave until it is fully melted and smooth. Stir in green food coloring until it is fully green. Coat each truffle in the chocolate and set onto a plate. Top each one with candy eyes and let sit until it is completely set.

Monster Eye Buttercream Truffles

Ingredients
  

  • 1/2 cup butter, softened
  • 2-3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 oz. white chocolate chips
  • green food coloring
  • candy eyes

Instructions
 

  • In a large bowl, mix together butter, powdered sugar, and vanilla extract until a thick dough forms. Roll the mixture into balls and set onto a plate. Freeze for at least 20 minutes.
  • Place chocolate chips into a microwave-safe bowl, and heat in the microwave in 30-second intervals, stirring well until it is fully melted and smooth. Stir in food coloring.
  • Coat each truffle in the chocolate and set onto a plate. Top with candy eyes, and let sit until it is completely set.
