Reese’s Peanut Butter Cup Stuffed Cake Mix Peanut Butter Easter Cookies

Soft and chewy peanut butter cookies made with a box of cake mix and filled with fun Easter themed sprinkles. Each cookie is also stuffed with a chocolate Reese’s peanut butter cup. Everyone will love the soft and chewy texture of the cookies and the delicious chocolate surprise in each cookie.

The cookie dough is made by mixing a box of cake mix with peanut butter, eggs and vegetable oil until smooth. Fold in Easter themed sprinkles. Place the cookie dough onto a large baking sheet at least 2-inches apart. Place one peanut butter cup on each cookie dough and cover fully with more cookie dough. Bake until the cookies are fully cooked through.

Ingredients
  

  • 1 ( 15 oz.) box yellow cake mix
  • 1/2 cup peanut butter
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup Easter sprinkles
  • mini Reese's peanut butter cups

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, peanut butter, eggs, and vegetable oil until smooth. Fold in the sprinkles.
  • Place the cookie dough onto a large ungreased baking sheet at least 2-inches apart. Place one peanut butter cup on each cookie dough, and cover with more dough. Bake for 10-12 minutes.
