Easy blondie cups made green with food coloring. They make the perfect easy treat to bake this St. Patrick’s day. Everyone will love the classic brown sugar blondie flavors and the fun St. Patrick’s day themed twist to the blondie cups.

The batter is made like a classic blondie batter, except with the addition of green food coloring added to the batter. Evenly divide the batter between a paper lined muffin pan bake until each cup comes out clean with a toothpick. Let cool completely before serving.

Ingredients
  

  • 2 large eggs
  • 1 cup butter, melted
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • green food coloring

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together eggs, melted butter, brown sugar, and vanilla extract until smooth.
  • Add in the flour, salt, and baking powder, and mix until smooth. Add in the food coloring. Evenly divide the batter between the paper liners. Bake for 12-15 minutes.
