For the chicken, you can either cook it in the oven or your prefered method, and chop it into pieces. Or this recipe is great for using leftover or pre cooked bagged or rotissery chicken. Mix the cooked chicken with cooked rice. You can use minute rice for this recipe. And season the chicken and rice with taco seasoning and salsa. Evenly divide the chicken and rice mixture between the tortillas and roll them up into burritos. Cook them on a hot lightly greased skillet until they are lightly browned.
Cheesy Chicken and Rice Burritos
Ingredients
- 1 pound cooked and diced chicken
- 2 cups cooked rice
- 2 tablespoons taco seasoning
- 1/4 cup salsa
- 1 1/2 cups shredded cheddar cheese
- 8 flour tortillas
Instructions
- Heat chicken and mix with the cooked rice, taco seasoning and salsa. Lay the tortillas down flat and evenly place the chicken mixture down the center of each tortilla.
- Sprinkle each with shredded cheddar cheese and roll up into a burrito. Heat a skillet over medium heat and grease with non-stick cooking spray. Cook burritos until lightly browned on both sides and the cheese has melted.
