Soft and chewy mint chocolate chip cookies made with a box of cake mix and filled with white chocolate chips instead of regular chocolate chips. Each cookie is also stuffed with a Rolo. Everyone will love the delicious mint chocolate flavors and delicious Rolo surprise in each cookie.
The cookie dough is made by mixing a box of cake mix with eggs, vegetable oil, and mint extract until smooth. Stir in the food coloring. Fold in the white chocolate chips. Place the cookie dough onto a large ungreased baking sheet at least 2-inches apart. Place one Rolo on each cookie dough, and cover with more cookie dough. Bake until the cookies are fully cooked through.

- Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, vegetable oil and mint extract until smooth. Add in the food coloring until it is fully green. Fold in the white chocolate chips.
- Place the cookie dough onto a large ungreased baking sheet at least 2-inches apart. Place one Rolo on each cookie dough, and cover with more dough. Bake for 10-12 minutes.
