Andes Mint Brownies

Soft and chewy chocolate brownies filled with delicious Andes mints inside of the brownies. Everyone will love the classic chocolate brownie texture with the delicious flavors of classic Andes mints. These easy brownies make the perfect treat to bake this Christmas.

The brownie batter is made by whisking all of the ingredients together until smooth. You can also use a box of brownie mix and prepare it according to package directions. Spread half of the brownie batter into a greased square baking dish. Top with Andes mints in a single layer. Pour the remaining brownie batter over the chocolate. Bake until the center of the brownies comes out clean with a toothpick. Let cool completely before cutting into squares and serving.

Andes Mint Brownies

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • Andes mints

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together flour, sugar, cocoa powder, salt, and baking soda. Add in the eggs, melted butter, and vanilla extract, and mix until smooth.
  • Spread half of the brownie batter into a greased square baking dish. Top with andes mints, and the remaining brownie batter. Bake for 25-30 minutes.
