Creamy Bacon Pepper Jack Mashed Potatoes

Creamy and delicious mashed potatoes filled with shredded pepper jack cheese and crispy crumbled bacon. Everyone will love these cheesy and creamy mashed potatoes served to go along side any main meal. Or even as a delicious Thanksgiving, Christmas or Easter dish.

The potatoes are first boiled until they are fork tender. Drain the potatoes and mash them in a large bowl along with the remaining ingredients until creamy and smooth.

• 2 pounds russet potatoes, peeled and diced
• 1/2 cup butter
• 1 cup shredded pepper jack cheese
• 1/4 cup cooked and crumbled bacon
• 1/2 teaspoon salt
• 1/4 teaspoon ground black pepper

Method

 

1. Place the potatoes into a large saucepan and cover with water. Cook over medium heat, until the potatoes are fork tender. Drain and mash with the remaining ingredients until smooth.
