Lemon White Chocolate Chip Shortbread Cookies

Buttery and crumbly homemade shortbread cookies filled with tons of lemon flavors, and white chocolate chips. These easy buttery cookies make the perfect easy treat to bake this spring or summer. All you need is five simple ingredients to make these sweet and buttery cookies.

The only five ingredients that you need is butter, powdered sugar, lemon juice, flour, and white chocolate chips. All five ingredients are mixed together in a large bowl until combined. Roll the cookie dough into balls, and flatten them slightly. Place the cookies onto a large ungreased baking sheet. Bake until the bottom of the cookies are lightly browned.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 tablespoons lemon juice
  • 2 cups all-purpose flour
  • 1 cup white chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine butter with powdered sugar until fluffy. Add in the lemon juice, and mix until smooth. Add in the flour, mix until it is fully combined.
  • Fold in the white chocolate chips. Roll the cookie dough into balls, and flatten slightly. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
