Soft and chewy carrot cake cookies made from a box of carrot cake mix, and rolled in powdered sugar before baking. These easy cookies need only five simple ingredients to make. Everyone will love the soft and chewy texture of the cookies, and the delicious raisin and carrot flavors.

The only five ingredients that you need for these cookies is a box of carrot cake mix, eggs, vegetable oil, raisins, and powdered sugar. All of the ingredients, except for powdered sugar are mixed together in a large bowl until smooth. Roll the cookie dough into balls, and roll each one into the powdered sugar. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

  • 1 ( 15 oz.) box carrot cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup raisins
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the raisins.
  • Place the powdered sugar into a shallow dish. Roll the cookie dough into balls, then roll each one into the powdered sugar. Place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
