These easy thin mint truffles are made similar to a classic Oreo ball, but instead of using crushed Oreo cookies, crushed thin mint cookies are used instead. They are mixed with cream cheese, and covered in melted chocolate. These easy mint truffles make the perfect easy no-bake treat for St. Patrick’s day or Christmas.
The only three ingredients that you need for these truffles is a package of thin mint cookies or other mint chocolate cookies, cream cheese that is softened, and a bag of chocolate chips. The crushed thin mint cookies are mixed with the cream cheese until combined. Roll the mixture into balls, and set them onto a plate. Refrigerate for at least 20 minutes. The chocolate chips are melted in the microwave in 30-second intervals, stirring well until it is fully melted and smooth. Fully coat each thin mint truffle into the melted chocolate, and set back onto a plate. Let sit until the chocolate has completely set.

- 1 package thin mint cookies, crushed
- 8 oz. cream cheese, softened
- 12 oz. chocolate chips
Instructions
- In a large bowl, mix crushed thin mint cookies with cream cheese until combined. Roll the mixture into balls, and place them onto a plate. Refrigerate for at least 20 minutes.
- Place the chocolate chips into a microwave-safe bowl, and heat in the microwave in 30-second intervals, stirring well until it is fully melted and smooth.
- Use a fork to fully coat each truffle into the melted chocolate. Set onto a plate, and let sit until the chocolate has completely set.
