Soft and chewy oatmeal cookie bars filled with peanut butter and chocolate chips. These easy cookie bars are chewy and delicious. Everyone will love these easy cookie bars for any occasion. The peanut butter and chocolate chip flavors go together perfectly combined with the classic oatmeal cookie flavors.

The cookie dough is made similar to a classic chewy oatmeal cookie dough, except with the addition of peanut butter and chocolate chips mixed into the cookie dough. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Peanut Butter Chocolate Chip Oatmeal Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with peanut butter and both sugars until fluffy. Add in egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture until it is fully combined. Fold in the chocolate chips. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
